Chef Collins has been cooking for forty six years. In the 1960’s and early 70’s he was the breakfast chef at the Lake George Hotel, Lake George, NY the largest hotel in the busy resort of Lake George, NY. Serving made to order breakfasts to over 300 guests daily. Following that Chef Collins was the sous chef at Martha’s Restaurant on the Common in Hudson Falls, NY. During the later 1970’s and 1980’s Chef Collins worked at various cook stations at The Montcalm South, and at Alfred’s Restaurant in Lake George. During the 1990’s Chef Collins was a private caterer. In 2000 and 2001 Chef Collins appeared as a guest Chef at The Inn on Newfound Lake, Pasquaney Restaurant. He was the Chef de Cusine of the Café on the Common in Hebron, NH in 2003 and 2004. When the Lakes Region Culinary Institute was formed in 2005 Chef Collins became our Executive Chef and Cooking School Director. Chef Collins is a member of The American Culinary Federation. Chef Collins also has extensive business experience and was a VP of a Fortune 500 Company before dedicating himself to teaching cuisine.
